Chicken & Rice

I’m a huge fan of easy one-pot meals, and this one hits the comfort food check box as well. I change up the seasoning to whatever I’m in the mood for, so have fun experimenting and let me know your favorite combos.  


  • 1 tbsp Olive Oil
  • .5 Onion, diced
  • 1 Carrot, sliced
  • 1 Garlic, minced
  • 1 Chicken Breast, diced
  • 2 cups Chicken Broth
  • 1 Cup Rice
  • 1 tbsp Yellow Curry Paste
  • salt & pepper

In a large pot on medium heat, add olive oil. When oil is warm, add onion, carrots, salt & pepper and sweat vegetables until oinions a clear. Add garlic.

Dice chicken into bite-size pieces while vegetable cook, add chicken to pan and cook until they are seared or white all over. 

Add rice and stir. Add broth and seasoning, stir. Bring to a boil, then set temp to low and cover for 18 minutes. 

Stir with a rice spoon and serve. 


Juice of half a lemon

1 tsp Thyme

1/2 cup pineapple juice (reduce broth)

1/2 cup Pineapple tidbits

1/2 tsp fresh rosemary

1/2 tsp sage

1/2 tsp thyme
